A fully-washed coffee from Jeffrey Usaka’s farm, Saruta, in the eastern highlands of Papua New Guinea. A wonderfully smooth coffee with a heavy body and flavours of toffee and dried fruits. Excellent with milk.

Process: Fully washed. Extended wet fermentation.
Varietal: Arusha, Blue Mountain, Typica
Taste profile: Heavy body with notes of gingerbread, toffee, dried fruits
Suitability: Espresso or filter with or without milk
Recommendations: We think this is probably best served as an espresso in milk–based drinks.
Covoya have this to say about these beans from Papua New Guinea: “this fully washed lot is sourced from producer Jeffrey Usaka’s 75ha farm Saruta in the Obura district, of Papua New Guinea’s Eastern Highlands. Cherries are selectively harvested by hand utilising Brix measurements to ensure optimal sugar content. The cherries are then floated to further select only the densest, highest quality for processing. After de-pulping the coffee undergoes a controlled wet-fermentation for an extended period of 72hrs, followed by thorough washing. The parchment coffee is then sun dried on a cemented patio for 5-7 days, or until the optimum moisture content has been reached.”
