Pink Bourbon, so called due to its cherries distinct pink hue and the initial belief that it was a cross between yellow and red bourbon, is a very unique and high quality variety which has been rising in popularity in recent years. In 2023, Pink Bourbon was used by two World Barista Championship competitors and it was truly brought to the specialty coffee spotlight. With the variety still being somewhat of a mystery, it has been undergoing scientific research and is now understood to in fact be closer genetically to Ethiopian landrace varieties, despite being discovered in Colombia. It's known for a delicate, floral and complex flavour profile and cup qualities which will rival even the finest Gesha.
In Pitalito, Huila, Edier works next to Cesar, the professor who developed the Pink Bourbon Creation project. In his own words, Edier has been involved in coffee “since his first thoughts.” He started his own project in Vereda Chillurco back in 2014 and since then has been growing his genetic materials to have nowadays approximately 8 different varieties such as Pink Bourbon, Gesha, Java, Laurina to name a few.
