A blend of premium Brazilian arabica coffees that have undergone the innovative Swiss Water Process to remove the caffeine (SWD). No chemical solvent is used in this process to get rid of caffeine. You may detect sweetness and freshly roasted hazelnut in both the taste and the scent. The coffee is light overall, with gentle acidity and body.

The finer details…
The world’s largest producer of coffee is Brazil. With such diversity, it produces a wide variety of coffee, from tiny family farms to huge estates. Excellent growing conditions are created by the soil, local weather, and temperatures. But because Brazil lacks height, which is thought to be essential for producing the highest quality flavours in Arabica coffee, much of the country’s coffee is cultivated at or below 1000 metres above sea level. Much lower than the typical 1400–1800masl range that is present in many other countries that produce coffee. Brazilian commercial grades often have flavouring that evokes nuts, caramel, and creamy body, but as producers perfect new methods, we are starting to experience new flavours like sweetness, citrus, and acidity in these coffees.
The beans are cleansed and hydrated with pure, local water to get them ready for the caffeine removal process. After that, the beans are introduced to an internally produced Green Coffee Extract (GCE), and the caffeine removal process starts. Until the ratio of soluble compounds in the GCE to those in the coffee reaches an equilibrium point, caffeine goes out on its own, away from the coffee beans, into the GCE. Until all of the caffeine is captured and separated from the GCE, which is renewed so that it can be used repeatedly to extract more caffeine, the GCE and caffeine run continually through carbon filters. Coffee is examined for caffeine levels, time, and gauge temperature controls throughout the course of around 10 hours, or until it is 99.9% caffeine free.
