A micro-lot sourced from 4 farms located near to the village of Gaitania, in la Planada, to the central west of Colombia, with the foothills of the Colombian Andes. A fully washed coffee with an extended dry fermentation period. This coffee packs a punch. It has a medium-body and obvious bright acidity, with flavour notes of citrus and generally crisp acidity. A coffee which is more obvious than subtle. It can be drunk with milk or without, as an espresso or filter; it will wake you up in the morning.

This lot was sourced from 4 farms near the village of Gaitania in Planadas, Tolima; Fincas El Jardí, El Triunfo, La Florida and La Argentina. It is washed in line with Colombian coffee processing traditions, where ripe cherries are de-pulped and then dry fermented for 60 hours, thoroughly washed in the fermentation tank, and then dried for 15 days in a marquesina(a specialised covered drying method common in Colombia, essentially a greenhouse-marquee).
Covoya explain that “Planadas is located on the southern tip of the department of Tolima, close to borders with Huila and Cauca. Situated in the foothills of the central mountain range of the Colombian Andes, the region benefits from excellent altitudes, cool temperatures, plentiful sunshine and rain, and rich volcanic soils. Coffee farmers in Tolima are dedicated and traditional. In some areas, their infrastructure is not as developed as in other regions because of the history of conflict. This is the region where FARC guerrilla originated and therefore, communities all across Tolima experienced the cruellest years of conflict in Colombia. As a result, and despite exceptional growing conditions, many farmers were previously isolated from access to extension services, agri-inputs and thriving markets for their coffee”.
